연구진은 골마지를 형성한 효모의 종류와 특징을 확인하기 위해 배추김치와 갓김치, 열무김치, 백김치를 수집해 차세대 염기서열 분석을 진행했다. 차세대 염기서열 분석법은 DNA를 여러 조각으로 분해한 다음, 조각별 염기서열을 조합하는 방식으로 전체 정보를 해독하는 기술이다. 

인천시 남동구가 브랜드와 레시피를 개발해 만든 ‘소래찬’ 김치가 6월 출시될 전망이다.



구는 14일 농업회사법인(주) 우리김치, 명가식품, 생생찬, 일미식품, 정우식품 등 지역 식품제조가공업체 5곳과 소래찬 김치 생산·유통을 위한 업무 협약을 체결했다.

생산 업체는 소래찬 상표에 대한 이미지와 소비자 신뢰를 높일 수 있도록 최고의 품질 수준을 유지해야 한다.
